Students eat insects at smorgasbord

Any one with enough courage and intestinal fortitude had the chance to chow down on some unconventional food Thursday, as UT professor Jerome Grant’s freshman year studies class hosted an insect tasting event on the UT Agriculture campus.

The students and Grant hoped to raise awareness about the importance of insects as a food source and source of vital nutrients to different cultures around the world.

The bugs were prepared in a number of insect themed dishes: baganda cricket stir fry, cicada surprise, cricket casserole, and mealworm meatballs.

Salsa gusano, or worm sauce, is a traditional Mexican food which features dried caterpillers from the maguey plant.

Cricket casserole served as one of the insect buffet's main dishes.
